How to Prepare Nigerian Jollof Rice with Basmati Rice

IMG_20160519_174518 (1)Nigerian Jollof rice is a traditional meal served at most Africans parties and homes. This is the most popular Nigerian rice recipe. It is quite easy to prepare if you follow the simple steps.



  • 1000g of Basmati Rice
  •  Tomato Puree 20g
  • Chicken Stock
  • 2 Red Pepper
  • 2 Scotch Bonnet
  • 1 Large Onion
  • 1 Mint leave
  • 2 Bay leaves
  • 1 Teaspoon of Nut Meg
  • 4 Large Fresh Tomatoes
  • 1 Clove of Garlic and 3g of Ginger
  • 5g of Margarine
  • salt (to taste)
  • 1 Teaspoon of Curry
  • 3 Knorr cubes
  • 1 teaspoons Thyme
  • 1 Teaspoon of Cinnamon
  • 4 Tablespoon of Vegetable Oil

Cooking Directions

  1. Open the tomatoes puree and fry with oil in a separate pan, fry until it dry. Avoid being burnt,
  2. Blend your fresh tomatoes, peppers, onions, ginger and garlic till it smooth, pour in a cook pot till it boiled, then add your seasoning as listed above, your chicken stock, also add the fried tomato puree and butter,
  3. Leave it boiled, add two cups of hot water, rinse your rice in hot water, drain it and pour in the cooking pot,
  4. Reduce the velocity of your gas, cover cooking pot with foil paper and allow to steam for 15 minutes,
  5. Here is the result.
